Moroccan Chicken Drumstick Tagine
Ingredients:
- Qualiko chicken drumstick - 4 pc
- Salt - 1 tsp
- Ground ginger - ½ tsp
- Turmeric - ½ tsp
- Cinnamon powder - ½ tsp
- Black pepper powder - ½ tsp
- Saffron - pinch
- Olive oil - 1 tbsp
- Onion sliced - 1 large pc
- Garlic chopped - 3 cloves
- Pitted green olives - 5 pc
- Lemon preserved - 1 pc
- New potato cut in half - 4 pc
- Chicken broth - 1 cup
- Chopped parsley - ¼ cup
How to cook?
- Mix spices and salt in a small bowl. Cover chicken pieces with the spices.
- Heat oil in a heavy pot. Add olive oil and cook chicken on all sides until browned, in batches if needed.
- Remove the chicken from the pot. Add the onion and garlic, cook for 5 min.
- Pour in the chicken broth and stir. Add the chicken, potato and bring to a boil.
- Then cover, reduce heat to medium-low, and cook for 25 min.
- Squeeze the lemons into the pot and add the rinds. Add the olives. Cook for 10 more min. on high heat, uncovered.
- Garnish with chopped parsley and serve with couscous if required.
