Moroccan Chicken Drumstick Tagine

Ingredients:
  • Qualiko chicken drumstick - 4 pc
  • Salt - 1 tsp
  • Ground ginger - ½ tsp
  • Turmeric - ½ tsp
  • Cinnamon powder - ½ tsp
  • Black pepper powder - ½ tsp
  • Saffron - pinch
  • Olive oil - 1 tbsp
  • Onion sliced - 1 large pc
  • Garlic chopped - 3 cloves
  • Pitted green olives - 5 pc
  • Lemon preserved - 1 pc
  • New potato cut in half - 4 pc
  • Chicken broth - 1 cup
  • Chopped parsley - ¼ cup

How to cook?

  • Mix spices and salt in a small bowl. Cover chicken pieces with the spices.
  • Heat oil in a heavy pot. Add olive oil and cook chicken on all sides until browned, in batches if needed.
  • Remove the chicken from the pot. Add the onion and garlic, cook for 5 min.
  • Pour in the chicken broth and stir. Add the chicken, potato and bring to a boil.
  • Then cover, reduce heat to medium-low, and cook for 25 min.
  • Squeeze the lemons into the pot and add the rinds. Add the olives. Cook for 10 more min. on high heat, uncovered.
  • Garnish with chopped parsley and serve with couscous if required.
